Orange Ginger Glazed Salmon and Sweet Potato Fries!

Well day 9 went pretty well. I had a wedding and ate a big breakfast and lunch and had some nuts in between lunch and dinner. I brought my own veggies and thank goodness. I saw them “seasoning” the veggies with this big nasty bottle of fake butter.

Today is day 10 and every single thing I ate was delicious.

For breakfast I had a spinach, onion and pepper, egg scramble and half a tangelo (Which they didn’t have at any of the 3 grocery stores I was at today! Are they gone for the season?? Wahhh)

Lunch was a burger, sweet potato fries, green beans and some raspberries.

To make the sweet potato fries I cut them into fries and soaked them in water for 30 mins. I dried them off and tossed with a tablespoon of olive oil and some arrowroot powder, salt, pepper, and paprika. I baked for 20 min at 400, flipped and baked another 20. They came out perfectly crispy on the outside.

For dinner I made an Orange Ginger Glazed Salmon that came out amazing. To make it I simmered 1/2 a cup of orange juice till it reduced in half. I then stirred in some grated ginger, orange zest, a tablespoon of coconut aminos, and a little bit of sesame oil. I brushed it on the salmon fillets and baked at 400 for 20 mins. Brushing more of the glaze on every 5 mins. I had an apple after dinner so it would be part of meal 3.

I also had a hard-boiled egg white and some baby carrots after I did Insanity today. Agh! 1/3 of the way there and I feel great.
